Easy Dinner Salad PLUS Exciting News!!!
Recently I've been on tomato/zucchini overload, desperately trying to harvest every last morsel in my garden before Jack Frost sweeps in, forcing me to whip out my plastic and pay abhorently expensive prices for mediocre, tasteless, rubber produce. Yes, I have been spoiled in the best way possible this summer more than any year previous in regards to free, incredible, yummy food...don't think I don't realize this. Now I see a pint of non-organic cherry tomatoes at the store selling for $2.95 and I want to hoard even the slightest blushing tomato in my backyard. There's only so much freezing/dehydrating you can do though...so I've been making a lot of salad. This salad has been my go-to dinner, literally every night this week. I pre-make the zucchini noodles [optional] and it literally takes less than 3 minutes to whip up.
Ingredients:
Zucchini [optional], I love zucchini noodles, so I use this as my base, and then chop the zucchini "heart" into chips and give them a few hours in the dehydrator.
Green of choice, I've been using a combo of arugula and spinach, but you can use any green. If you don't want to make zoodles then this will be your base.
Tomato, fresh and/or dehydrated, I use a combination of both
Corn, raw, shaved right off the cob
Chives, green onion, to taste
In case you haven't noticed, the ingredients here are so so flexible. You can pick, choose, and customize this any which way you want. Mine is based off of the last of my summer veggies; I am still mourning their not-so-gradual departure...'til next year...
The thing that makes this salad SO easy is the dressing. No blending, no food processing, nope just wisking. As in the ingredients, a bowl and a spoon. Here we go:
Dressing:
2-3 Tablespoons Raw Tahini [Raw really is better than cooked here. I prefer "Blue Mountain Organics" but there are a few good brands out there. Usually found at Whole Foods.]
Juice from 1 lemon or lime
1-3 Tablespoons water [depending on the consistency you prefer]
Put ingredients in bowl or measuring cup. Stir until mixed evenly with spoon. Pour over salad.
How easy is that?

The Power of [Power]Walking
Looking for a way to revamp up your workout routine? Have you tried power-walking?
I know, it totally sounds hokey, like some quick fix. You're probably thinking, Gosh. Power-walking? That won't help me get out of my rut/plateau/lose weight/insert fitness goal. It's too simple. If it were that easy than I would have thought of it already and sorry but that just won't work for me.
Well don't knock it til you've tried it!
I had very similar thoughts two weeks ago when Coach Selby was talking to us about the power of power walking. The "trick" is to actually DO it. And by do it I mean really walk, as fast as you possibly can, as in: if you walked any faster you'd be busting out a bounce and be forced to jog. For me, that's walking at a 5.0 mph pace on a treadmill, flat [no incline or decline]. I'm really much more comfortable jogging at that pace, but that's just it: you're not supposed to be comfortable.
Power-walking is hard because it forces you to focus on putting one foot in front of the other in a systematic way, moving your hips, twisting your torso, and kicking off with your heels and calves, always keeping one foot on the ground [as opposed to running where there is a split second between each stride where both feet are off the ground]. If you think about it [or try it if you don't believe me], power-walking all out for a few minutes is much harder than jogging for miles and miles. I know when I power walk, after just a few minutes I am drenched in sweat and my heart rate is soaring. If interval sprint training scares you or you just want to try something knew, I think power-walking is for you. Keep it on a flat surface so as to equally target all leg muscles. And if you're doing it at a public gym, don't let peoples' weird looks get to you.
So just try it: power walk, 15 minutes a day, 3x per week. If it's "so easy" than why not give it a shot? Don't cheat yourself by thinking your walking your heart out when you can really up the pace. Seriously walk as fast as your body will take you without starting to jog and see where it takes you!
